I’ll admit it, I’m a chip addict. There’s just something about that crunchy goodness that makes everything all better. I mean it makes everything all better, until the bag is completely gone.
Now by no means am I saying eat this entire batch of healthy plantain chips, but feel free to enjoy these without the guilt brought on by regular chips. Plantains are a rich source of fiber and potassium, and also magnesium which can also help with everything from regulating blood pressure to lowering risk of type 2 diabetes.
Most healthy plantain chips sold in stores have a good list of ingredients, until you get to the palm oil. You can Google the downsides to palm oil, but it’s always better to make your food at home so you know what goes into it. These healthy plantain chips can also be cooked to your desired crunch level, something you can’t get if you buy in stores. I don’t know about you but I like these things nice and crunchy.Print
A great way to make a healthy snack without all the preservatives and other unhealthy junk.
- 1 each Ripe Plantain
- 1 tbsp Coconut Oil
- 1 tbsp Paprika
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Sea Salt
- Place a medium sized pan on the stovetop, and turn on medium heat. Place the coconut oil in the pan and while heating, cut the ends off of the plantain and then cut down one of the sides. Peel the outside off with your fingers, and chop 1″ chips (you can make these thicker if you want). Place the chips in the pan and let cook for 2 to 3 minutes or until desired crispiness is achieved. Flip over with a fork and cook 2 to 3 minutes as well.
- Place the cooked chips on a napkin to absorb the excess oil. Add in the desired spices, and mix the chips together to cover evenly.
- Place these healthy plantain chips in the fridge until ready to eat. They should stay good for 3 to 4 days, but they will definitely let you know when they are not good anymore.
- Enjoy these healthy plantain chips with tacos, for breakfast or as a snack with almond butter.
