Ah summertime; a time full of picnics, vacations, long days and of course sweltering California heat. I mean it can get ridiculously hot. I was looking for a drink that is not only perfect to serve at any summertime event, but also for something you can make any day the temperature decides to get stupid.
This coconut water mint lime mojito combines all my favorite flavors of a tropical getaway without, you know, the price tag. I use Harvest Bay pineapple coconut water as the base, and with only 7 grams of natural sugar you can’t beat that. I also added in half a can of the whole 30 sweetheart La Croix lime sparkling water for a little extra zing. What’s awesome about this coconut water mint lime mojito is that you can toss everything in a blender, spin it up and call it a day.
Coconut water is great on those super hot days because it contains natural electrolytes to help you avoid dehydration when the temperatures soar. I also find that coconut water works great for an upset stomach, and it’s a great source of calcium and magnesium. The mint also adds a fantastic hint of flavor, and it great for digestion as well.
Feel free to add more ingredients (rum..cough) or less of the ingredients to your liking. This simple to make drink has few ingredients, and is sure to be a hit with the crowd.
A family friendly mojito recipe that can light up any summertime event.
- 16 oz Harvest Bay Pineapple Coconut Water
- 1/2 cup La Croix Lime Sparkling Water
- 1 handful mint leaves
- 2 each Limes
- 1/8 tsp apple cider vinegar
- 1/8 tsp vanilla extract
- Take all of the ingredients and toss in a high powered blender. Blend until the mint is well blended. Place 4 to 5 cubes of ice in a cup, and pour the coconut water pineapple mint lime mojito over and serve.
