These paleo blueberry donuts are an easy low sugar alternative to regular donuts, and are a quick and easy delicious treat ready in less than 20 minutes! If you’re craving a little sweetness, thin out your favorite icing for a simple donut glaze.



1 bag Birchbenders Paleo Pancake and Waffle Mix

1/2 cup dairy free milk

2 tsp. cinnamon

1 tbsp. avocado oil

2 scoops Vital Proteins Collagen Peptides (optional)

handful blueberries

Vanilla Icing (if desired)


Pre heat the oven to 350 degrees

In a medium size bowl, mix together the pancake mix, cinnamon, collagen (if using) and avocado oil. Add in the milk last. Stir until well combined.

Add in the blueberries, and use a spoon to fold the blueberries in.

Coat the donut pan with avocado oil.

Scoop the donut mixture into the donut pan molds (you can also place the mixture in a gallon size zip lock bag and cut one of the corners for more control). Fill the mixtures 1/2 way below the center of the donut mold.

Place in the oven for 20 minutes.

To make the frosting, take your favorite vanilla frosting and mix it in a small saucepan with a teaspoon of milk and coconut oil to thin out. Wait till each donut is completely cooled before adding the icing.


This recipe will work with any of the Birchbenders mixes, so don’t be afraid to switch it up!
